STARTER: As a huge fan of sherry (fortified wine), I love to pair a tomato gazpacho with a Fino or Manzanilla. It is a dry, fresh style of sherry. This wine is from Andalucia (South of Spain). Fino and Manzanilla have flavours of young, green apples (Granny Smith), green olives, raw almonds and salty- remenicent of a sea breeze aroma. The palate is well balanced with a delicate freshness. If you are not keen on sherry I advise you a nice Sauvignon Blanc from Bordeaux or Pessac Leognan. The wine ages very well and develops yellow pip fruit (pear, apple) and touches of honey.

Discovery: Rioja rosado (Rose)

MAIN: This succulent bite of organic chicken breast, will compliment well with an organic Ventoux red wine from the southern Rhone Valley in France. Ventoux is well known as one of the famous mountains for the Tour de France. This wine is usually a blend of Grenache, Syrah, and Mourvèdre grape. The Grenache grape has dark fruit with smooth tannins. The homemade barbecue has a hints of sweetness, smoke and hickory which will balance with the tannins and the ripe dark fruit in the wine.

Discovery: Priorat in Spain (Granacha grape)

DESSERT: Madeira is a fortified wine from a Portuguese island. The Madeira wine is luscious, rich, sweet and fragrant – this is full of intense flavours of dried fruit, nuts and caramel. After opening the bottle you can keep it for at least 4 weeks. I advice to served it chilled. You can be more adventurous in choosing a coffee liquor or hazelnut liquor (Frangelico)
