Good friends Tom Shepherd and Tom Brown have collaborated this week to bring you a taste of Cornerstone, Hackney Wick along with Tom’s amazing flavours! This is a Dine at Home box not to be missed!

3 – 4 JULY MENU

BREAD – Milk bread with marmite butter

STARTER – Hoisin duck leg ravioli, carrot and mooli salad, carrot purée, dashi broth, coriander oil

TOM BROWN – Mackerel pate, cider jelly, treacle bread 

MAIN – Poached and roasted organic chicken, smoked potato purée, roasted teriyaki hen of the wood mushroom, honey and sesame glazed courgette, pak choi and teriyaki chicken jus

DESSERT – “Tiramisu” espresso soaked sponge, tia Maria, mascarpone mousse, 72% vahlrona chocolate

TREAT – Chocolate fudge

STARTER: Grenache rose from Languedoc (France) or Penedes (Spain). Grenache grape gives a nice pink colour and a flavoursome, dry palate for rose wine. The structure of the wine balances with the meaty flavour of the duck. The acidity will cleanse the palate. 

DISCOVERY: Zweiglt rose (Austria)

TOM BROWN – Albarino is a traditional grape from Rias Baixas (Spain). It is an aromatic grape, showing great citrus characters (lime, juicy grapefruit…), hints of white melon, followed by a saline note.
The palate is dry and light bodied yet has a vivid acidity. Everything is balanced. 

DISCOVERY: Assertiko (Greece)

MAIN: Pinot Noir and mushroom pair divinely. The smoky flavour from the potatoes and the roasted chicken will enhance the dark fruit note of the wine, whether it is the earthy note of an old Pinot Noir or a juicy, ripe Pinot from the New World. 
As a premium option, an aged Chablis (France) at least 4 years old. The Chardonnay grape in this area will give a flinty and mineral character.

DISCOVERY: Savagnin from Jura (France) or Koshu from Japan (Orange wine)

DESSERT: Pedro Ximenez grape from Andalucia in Spain. Sweet sherry with flavours of coffee beans, dark cacao and, of course, mixed nuts.  It could be a liquid tiramisu.
