We are excited to host a collaboration between Alex Claridge Chef, Owner of The Wildnerness and Liam Dillon Chef, Owner of The Boat Inn.

Exciting and innovative, the cuisine at The Wilderness is modern British, using seasonal produce foraged and sourced both locally and from across the UK. Alex is a Chef that knows what he wants and doesn’t compromise in order to deliver.

“I cook things as often as I need to pay the bills and buy a bottle of whisky. Thankfully 60% of the time, everyone loves it. It’s big balls out food based on places, people and memories that I like. I want the dining experience to be as relaxed as possible and I want everyone to feel welcome. I’m not interested in making fine dining stuffy or inaccessible; I don’t care what you wear, I just want you to have the best possible time whilst you’re with us.”

Liam has already made his mark at The Boat Inn, with his new venture gaining a listing in the Michelin Good Food Guide 2018 and The Michelin Pub guide. More recently winning Chef of The Year at The Midlands Food and Hospitality Awards 2018. He has now re-opened after closing for a major refurbishment to the kitchen, dining room and garden area.

“Sauce supper clubs are a great excuse to cook the food I want to. The evening is awash of foodies that know about food. It’s always fantastic to showcase something out of the ordinary. I love that the pub attracts talented chefs to come and showcase their food here.”

We are looking forward to seeing what Alex and Liam can conjure up for this unique collaboration!
